Ratio as an egg substitute: I use 1/8 cup or 2 tablespoons of applesauce in place of 1 whole egg. I will still recommend that you check for the consistency and add more if required.
When To Add: When using as an egg substitute, add the applesauce in the recipe at the stage when it calls for eggs.
Replacing Part Of Butter: Baked goods are often high in saturated fats and sugar. A way to replace the fat in cookies and cakes is to substitute some or all of the fat with applesauce. Applesauce acts like the fat because it keeps the flour protein from mixing completely with the wet ingredients and forming a rubbery texture. However, I will recommend replacing only a part of butter or oil initially. Do remember that the texture of the final product will differ. Also, the substitution works better when your recipe calls for melted butter or oil rather than soft butter.
